What Is Siphon Coffee and How Does It Work?
Siphon coffee, also called vacuum coffee, is brewed using vapor pressure and a vacuum rather than gravity or a pump. Water in a lower glass chamber heats, expanding the vapor that pushes it up a tube into an upper chamber, where it mixes with ground coffee. When the heat source is removed, the vapor cools and condenses, drawing the brewed coffee back through a filter and leaving the spent grounds behind. The result is a clean, full-bodied cup with almost no sediment and a bright, aromatic character that’s hard to get from drip or immersion brewing.

A siphon brewer uses an open flame, butane burner, or halogen heater directly under a glass chamber, and the glass gets very hot during brewing. Before you start:
- Brew on a stable, heat-safe surface, away from curtains, paper, or anything flammable
- Keep the setup away from children and pets while it’s heating or cooling
- Never move the brewer while the lower chamber is hot

The Physics Behind the Brew
Two physical principles do all the work in a siphon: vapor pressure and vacuum.
The push: Heat applied to the lower chamber turns some of the water into vapor. That vapor takes up more space than liquid water, so pressure builds inside the sealed lower chamber. The pressure has nowhere to go except up the siphon tube, forcing the remaining water into the upper chamber where the coffee grounds are waiting.
The steep: Once most of the water has risen, it mixes with the grounds in the upper chamber. This is an immersion brew, similar in principle to a French press, where grounds sit fully submerged for a set period rather than having water pass through them once.
The pull: When you remove or lower the heat, the vapor in the lower chamber cools and contracts back into liquid, dropping the pressure and creating a vacuum. That vacuum pulls the brewed coffee down through a cloth or mesh filter and back into the lower chamber, which now serves as your serving vessel. The grounds stay trapped above the filter.
This push-then-pull cycle is why siphon coffee looks like a science demonstration and why the filtration happens twice: once passively during steeping and once actively as the vacuum draws liquid through the filter, which is part of why the finished cup runs so clear.
What You Need to Brew Siphon Coffee
- A siphon (vacuum pot) brewer, typically made of heat-resistant borosilicate glass
- A heat source designed for your brewer: alcohol burner, butane burner, or halogen beam heater
- A cloth or mesh filter, either built into the brewer or a separate reusable piece
- A gooseneck kettle or measuring container for water
- A gram scale for coffee and water

Ratio, Grind, and Water Temperature
The Specialty Coffee Association publishes brewing guidelines that cover several manual methods, including siphon brewing, built around a target strength and extraction window known as the Golden Cup Standard. As a starting reference point for filter and immersion-style brewing generally:
- Ratio: Roughly 55 grams of coffee per liter of water, close to a 1:17–1:18 ratio by weight, with common home variations between 1:15 and 1:18
- Grind size: Medium — coarser than pour-over, finer than French press
- Water temperature: Around 195–205°F (90–96°C) at the point the water contacts the grounds
These are reference points, not fixed rules. If your cup tastes sour or thin, try a slightly finer grind or a longer steep. How Siphon Compares to Other Brewing Methods
- Vs. pour-over: Pour-over is a percolation method (water passes through grounds once); siphon is full immersion. Siphon typically produces a fuller body with less clarity than a well-made pour-over.
- Vs. French press: Both are immersion methods, but siphon filters through cloth or fine mesh under vacuum, removing most sediment. French press uses a metal mesh plunger, which lets more fine particles and oils through.
- Vs. drip machines: Drip brewers automate a percolation process with far less hands-on control. Siphon requires active attention to timing, heat, and stirring throughout the brew.
- Time and effort: A full siphon brew, from cold water to finished cup, generally takes about five to seven minutes including heat-up, with roughly two minutes of hands-on work. It’s slower and more involved than drip, comparable to or slightly longer than a careful pour-over.

Is siphon coffee stronger than drip coffee?
Not automatically. Strength depends on your coffee-to-water ratio and steep time, not the brewing method itself. A siphon brewed at a lighter ratio can be weaker than a strong drip cup, and vice versa.
How long does a siphon brew take from start to finish?
