If the same beans taste sharp and thin one week and flat the next, roast level is often the reason your usual grind-and-ratio setup stops working. A change in roast is a change in the coffee itself, not just a change in color, so a brewing method that was dialed in for one roast can need new numbers for another. This guide gives you a one-variable-at-a-time worksheet for making that adjustment on purpose instead of by guesswork.
Terms to Know Before You Adjust Anything
- Extraction — the process of dissolving flavor compounds out of ground coffee into water. Brew too little and the cup tastes sour or thin (under-extracted); brew too much and it tastes bitter or hollow (over-extracted).
- Solubility — how readily the compounds in a given coffee dissolve into water. Roast level, grind size, water temperature, and contact time all influence how much dissolves and how fast.
- Brew ratio — the proportion of dry coffee to water, usually written as grams of coffee per liter of water or as a ratio like 1:16.
- Contact time — how long water and grounds stay in contact during brewing, which is tied directly to grind size.
- Baseline — the one known-good starting recipe (ratio, grind, temperature, time) you return to before changing anything else.
What the Research Actually Establishes
The Specialty Coffee Association’s brewing protocols set a baseline coffee-to-water ratio of 55 grams per liter, plus or minus 10 percent, brewed with water at 200°F ± 5° (93°C ± 3°). The same protocols tie grind size to contact time: a finer grind is meant to spend roughly 1 to 4 minutes in contact with water, a standard drip grind roughly 4 to 6 minutes, and a coarser grind roughly 6 to 8 minutes. The National Coffee Association’s brewing overview confirms the broader point in plainer terms: “your process for brewing coffee is important — it impacts the quality and flavor in your cup as much as the variety and roast.”
Here is the honest limit of that evidence: neither source publishes a specific numeric adjustment for “how much finer” or “how much cooler” to brew a dark roast versus a light one. The SCA protocols describe a repeatable baseline and a grind-to-time relationship; they do not publish a roast-level correction table, and we are not going to invent one. What follows is a disciplined way to find your own correction, using that baseline as the fixed reference point.
Baseline vs. What Changes by Roast
- Fixed by the protocol: the 55 g/L ± 10% ratio and 200°F ± 5° water temperature are your starting point regardless of roast — change from here, don’t guess from scratch each time.
- Reported to shift with roast, but not quantified by these two sources: coffee professionals commonly describe darker roasts as more porous and faster to extract, and lighter roasts as denser and slower. Treat this as a reason to test, not as a fixed rule — bean origin, processing, and freshness can all change at the same time as roast, which makes it hard to know which change actually caused the taste difference.
- What the SCA protocol does confirm: grind size and contact time move together. If a roast change is making your cup taste different, grind and time are the first documented levers to test — before touching ratio or temperature.
A Field Guide: Adjusting One Variable at a Time
Use this worksheet the next time you switch roast levels on the same brewing method. Change only one variable per brew, and write down what you did — otherwise you won’t know which change fixed (or ruined) the cup.
- Start from your baseline. Brew the new roast with your usual ratio (around 55 g/L, or roughly 1:18 by weight), your usual grind setting, and 200°F water. Taste and take notes before changing anything.
- Name the problem in one word. Sour or thin points toward under-extraction. Bitter, harsh, or hollow points toward over-extraction. If the cup tastes balanced, stop — you don’t need an adjustment.
- Adjust grind first, using the SCA’s contact-time bands as your guide. If the cup is under-extracted, grind slightly finer (moving toward the shorter, 1–4 minute band); if it’s over-extracted, grind slightly coarser (toward the 6–8 minute band). Keep the ratio and water temperature the same as your baseline for this step.
- Brew again and taste before touching anything else. One grind change per test. If the fix worked, record the new setting next to the roast name so you can return to it directly next time.
- Only after grind, test ratio. If grind alone doesn’t solve it, try the same roast at a slightly stronger or weaker ratio, staying within the SCA’s 55 g/L ± 10% range, before moving outside it.
- Log the result. Keep a simple running note: roast name or roast date, grind setting, ratio, and a one-line taste description. Over a few bags, this becomes your own reference table — more useful than a generic rule, because it’s built from your actual water, grinder, and beans.
When a “Roast Problem” Isn’t Actually a Roast Problem
Before concluding that roast level is the cause, rule out the other variables the SCA protocol also controls for: water temperature drifting outside 200°F ± 5°, grounds sitting too long after grinding, or a scale error in your ratio. A cup that tastes off after a roast change is sometimes really a measurement or freshness issue that happened to show up at the same time.
