Where coffee comes from, in short
Coffee comes from the seeds of a flowering shrub, mostly grown in a band around the equator called the coffee belt. Two species dominate the market: Arabica and Robusta. After harvest, farmers use one of a few processing methods to remove the fruit around the bean, and that method — along with where the bean grew — shapes much of what you taste in the cup.
Arabica and Robusta: the two beans behind almost every cup
Nearly everything you drink comes from one of two coffee species.
- Arabica: Grown at higher elevations, generally seen as smoother and more acidic, and the base for most specialty and single-origin coffee.
- Robusta: Grown at lower elevations, higher in caffeine, and generally described as stronger and more bitter. It shows up often in espresso blends and instant coffee.
Some coffee is sold as a blend of the two. U.S. federal coffee purchasing standards formally classify beans this way — Bean A (Arabica) and Bean B (Robusta) — which shows how basic this split is to how the industry itself defines coffee.
Where coffee grows, and why the map matters
Coffee is farmed in dozens of countries, but a handful of growing regions account for most of what reaches store shelves. Federal coffee purchasing standards list Brazil, Colombia, Hawaii, Puerto Rico, Central America, Mexico, and Africa as recognized growing regions used to classify beans by origin.
Geography affects flavor through three main factors:
- Altitude: Beans grown at higher elevations mature more slowly, which is widely associated with denser beans and brighter acidity.
- Soil: Volcanic and mineral-rich soils are commonly linked to fuller body and more complex flavor.
- Climate: Rainfall patterns and temperature swings affect how evenly cherries ripen, which affects consistency from harvest to harvest.

How coffee is processed after harvest
Once cherries are picked, the fruit around the bean has to come off before the bean can be dried, roasted, and brewed. The method used is called “processing,” and it’s one of the biggest flavor variables in coffee — often bigger than roast level.
Washed (wet) process
Official U.S. coffee purchasing standards define washed coffee as coffee that has been pulped, fermented, washed, dried, and hulled. The ripe fruit goes through a “pulper” that removes the outer skin, fermentation and washing remove the sticky layer underneath, and then the beans are dried and hulled. This method is closely associated with cleaner, brighter, more acidic cups, because little of the fruit is left in contact with the bean during drying.
Natural (dry) process
In natural processing, the whole cherry is dried in the sun with the fruit still on, then hulled afterward. Because the bean dries inside the fruit, this method is generally associated with heavier body and more fruit-forward, sometimes fermented-tasting notes.
Honey process
Honey processing sits between the two. The skin is removed, but some or all of the sticky fruit layer, called mucilage, is left on the bean during drying. Producers often describe honey-processed coffee as landing between washed and natural in body and sweetness, though the exact technique varies by farm and region.
Processing methods compared
Washed: Pulped, fermented, washed, then dried. Generally associated with a clean, bright, more acidic cup.
Natural: Dried with the whole cherry still on. Generally associated with heavier body and fruit-forward notes.
Honey: Skin removed, some fruit mucilage left on during drying. Generally described as sitting between washed and natural in body and sweetness.
These are general tendencies from how each method works, not guaranteed results. The same process can taste different depending on the farm, the specific beans, and the roast.
Roast level: a separate variable from origin and processing
Origin and processing set up the raw material. Roasting is what turns green beans into the brown beans you grind and brew. Federal coffee standards define four roast shades:
- Light roast: Light brown color, generally no visible oil on the bean surface.
- Medium roast: Medium brown color, stronger flavor, may show a slight oily surface.
- Moderately dark roast: Darker color, some surface oil, slight bittersweet finish.
- Dark roast: Shiny, oily surface and a pronounced bitterness; color runs from dark to charred.
Darker roasting tends to mute the specific origin and processing notes described above, which is part of why lighter roasts are more common in single-origin and specialty coffee.
How coffee gets graded
Green, unroasted coffee is checked for defects before it’s sold. Federal coffee purchasing standards define defects to include black beans, broken beans, sticks, shells, immature “quaker” beans, stones, and pods, and set limits on how many defects a sample can contain. Beans from the same farm or lot with the same grade and origin are grouped into what the standard calls a “chop.” This grading system is part of why some origin coffees cost more than others — fewer defects and more careful sorting take more labor.

- Does it name a country, region, or single farm, or just a continent?
- Does it say Arabica, Robusta, or a blend of both?
- Is the processing method listed, such as washed, natural, or honey?
- Is the roast level and roast date shown?
- Are there comparative or health claims without any source? Treat those with caution.
Caffeine, origin, and processing
Caffeine content is driven mainly by species, not processing method. Robusta contains more caffeine than Arabica regardless of whether it’s washed or naturally processed.
