Pour-Over Coffee, Explained Simply

Pour-over is a manual filter method where you pour hot water over ground coffee in stages instead of letting a machine do it. The V60, Chemex, and Kalita Wave all work the same basic way, but their cone shape, hole size, and filter thickness change how fast water moves through the grounds. That flow rate, combined with water temperature, grind size, and bloom time, is what decides whether a cup tastes balanced, sour, or bitter.

How V60, Chemex, and Kalita Wave Differ

Each dripper controls flow differently. Knowing the mechanical difference helps you predict how a recipe will behave before you brew it.

  • Hario V60: Cone-shaped with spiral ridges and one large center hole. Water drains quickly, so pour technique has the biggest effect on extraction.
  • Chemex: Larger cone paired with a thick, proprietary filter. The thick paper slows flow and traps more oils and fines, giving a cleaner, lighter-bodied cup.
  • Kalita Wave: Flat-bottomed with three small holes. The flat bed and small holes even out water contact, which makes it more forgiving of pour inconsistency than the V60.

The Four Variables That Control Extraction

Every pour-over cup is a balance of these four factors. Change one at a time so you know what actually fixed the problem.

  • Grind size: Finer grounds increase surface area and slow water flow, pulling out more flavor per second of contact.
  • Water temperature: Hotter water extracts faster. Many home brewers use water just off a rolling boil, roughly 195°F to 205°F (90°C to 96°C), and adjust from there by taste.
  • Bloom time: A 30 to 45 second rest after the first pour lets trapped carbon dioxide escape so water can saturate the grounds evenly on later pours.
  • Flow rate: Set by grind size, pour speed, and the dripper itself. Faster flow means less contact time and a lighter extraction; slower flow means more.

Step-by-Step Pour-Over Technique

  1. Rinse the filter. Hot water removes paper taste and preheats the dripper and carafe.
  2. Add grounds and level the bed. A flat bed helps water pass through evenly rather than flow down a single channel.
  3. Bloom. Pour about twice the coffee’s weight in water, then wait 30 to 45 seconds for it to bubble and settle.
  4. Pour in stages. Add water in two or three slow, circular pours, keeping the water level fairly steady instead of flooding the dripper.
  5. Let it drain fully. Total brew time typically runs 2.5 to 4.5 minutes depending on the dripper and grind. If it finishes far outside that window, adjust grind size next time.

Starting Ratios and Times by Dripper

  • V60: Medium-fine grind, 1:16–1:17 ratio, roughly 2.5 to 3 minutes total.
  • Chemex: Medium-coarse grind, 1:16–1:17 ratio, roughly 3.5 to 4.5 minutes total.
  • Kalita Wave: Medium-fine grind, 1:16–1:17 ratio, roughly 3 to 4 minutes total.

Troubleshooting Your Cup

  • Water drains too fast; cup tastes sour or thin: Grind finer or pour more slowly to increase contact time.
  • Water stalls or overflows the dripper: Grind coarser, or check that the filter hasn’t collapsed against the cone.
  • Cup tastes bitter or dry: Grind coarser, lower the water temperature slightly, or shorten total brew time.
  • One side drains faster than the other, known as channeling: Level the coffee bed before brewing and pour in slow, deliberate circles instead of one heavy stream.
  • Cup tastes flat or muted: Check that the water reached full temperature and that the bloom stage fully wetted all the grounds.

Roast Level and How Grounds Behave

USDA’s coffee commercial item description classifies roasted coffee into shades such as light, medium, moderately dark, and dark, based on color and Agtron light-reflectance readings. Roast level also changes bean density. As a general rule in coffee brewing, denser, lighter-roasted beans often need a slightly finer grind or longer contact time to reach the same strength as a darker roast at the same grind setting, though the right adjustment always depends on tasting the result.

Caffeine and Pour-Over

Which pour-over dripper is easiest for beginners?

The Kalita Wave’s flat bed is generally more forgiving of pour inconsistency than the V60’s fast-draining cone, so it’s a common beginner recommendation. The Chemex is also forgiving because its thick filter naturally slows things down.

What grind size should I use for pour-over?

Why does my pour-over taste different every time?

Small changes in grind, pour speed, bloom time, or water temperature all shift extraction. Keeping one baseline recipe and changing only one variable at a time makes results repeatable.

Is pour-over coffee stronger than drip coffee?

Not automatically. Strength depends on the coffee-to-water ratio you use, not the brewing method itself. A pour-over and a drip machine can produce similar strength at similar ratios.
