Coffee is about 98% water. The calcium, magnesium, and bicarbonate dissolved in that water change how much flavor gets pulled from the grounds and how the finished cup tastes. Water that is too pure can taste flat and sour.
Water with too many minerals can taste dull, chalky, or muddy. Getting water right is one of the most overlooked variables in a good cup.
Why water composition matters for extraction
Brewing is extraction: hot water pulls soluble compounds out of ground coffee. Minerals in water, especially calcium and magnesium, bind to some of those compounds and help carry flavor into the cup. Bicarbonate acts as a buffer that affects acidity. This is why the exact same coffee, ground and brewed the same way, can taste different in two cities with different tap water.
- Calcium and magnesium (hardness): help extract and carry flavor compounds; too little can taste thin or sour, too much can taste flat or heavy.
- Bicarbonate (alkalinity): buffers acidity; too much can mute brightness and make coffee taste dull.
- Sodium, chloride, and other trace minerals: usually present in small amounts and less central to taste, but they contribute to total dissolved solids.
What TDS actually measures
Total dissolved solids, or TDS, is a single number that adds up everything dissolved in water, including minerals, salts, and other compounds. It’s measured in parts per million (ppm) or milligrams per liter. TDS alone doesn’t tell you which minerals are present, but it’s a fast, practical way to check whether your water is close to the range coffee professionals generally aim for.
Coffee industry guidance commonly points to a target TDS in the range of roughly 75–250 ppm for brewing water, with something near the middle of that range often used as a starting point. Water far outside that range, either very low (like straight distilled or reverse-osmosis water) or very high (like hard well water), tends to produce a less balanced cup.
What the EPA actually regulates in your tap water
It helps to understand what your water utility is required to control. The EPA’s National Primary Drinking Water Regulations set legally enforceable limits on health-related contaminants, like lead, copper, and specific chemicals and microorganisms, in public water systems. These rules exist to protect health, not to optimize taste.
TDS, hardness, and mineral content fall mostly under separate, non-enforceable secondary standards that address taste, odor, and appearance rather than safety. Under those secondary guidelines, EPA lists a recommended TDS level of 500 mg/L and a pH range of 6.5 to 8.5 for finished tap water. In other words, your water can be perfectly safe to drink under EPA rules and still taste flat, metallic, or overly mineral-heavy for coffee. Safety and brewing quality are two different questions.
Minerals in water also count toward daily intake
Calcium and magnesium in water aren’t only a taste factor. Food composition data tracked by the USDA’s FoodData Central shows that water itself can be a small but real contributor to daily mineral intake, alongside food. It’s a minor source compared to diet overall, but it’s a reminder that the water you brew with isn’t nutritionally neutral.
Practical ways to prepare water for coffee
You don’t need a lab to get better water. Here are the common approaches, from simplest to most controlled.
- Straight tap water: Works fine if your local water is already in a moderate TDS and hardness range and doesn’t taste strongly of chlorine or minerals. Cheapest option, but inconsistent across regions and seasons.
- Basic carbon filter (pitcher or faucet): Removes chlorine taste and some sediment. Doesn’t significantly change hardness or TDS. A reasonable first upgrade if your tap water tastes fine but smells or tastes of chlorine.
- Bottled spring water: Mineral content varies by brand and source, so results are inconsistent. Check the label for a TDS or mineral content figure if the brand publishes one.
- Reverse osmosis (RO) or distilled water, used alone: Very low in minerals, which often produces flat, sour, underextracted coffee. Generally not recommended without remineralizing.
- Remineralized RO or distilled water: RO or distilled water combined with a small, measured mineral addition (commercial mineral drops or a home recipe) to bring TDS and hardness into a target range. This gives the most consistent, repeatable results but takes more effort and equipment.
A simple troubleshooting path
- Cup tastes sour, thin, or sharp: Water may be too soft or low in minerals. Try a different water source or a mineral-added water.
- Cup tastes flat, dull, or muddy: Water may be too hard or high in TDS. Try a filtered or lower-mineral water source.
- Cup tastes like chlorine or “pool water”: A basic carbon filter usually solves this without changing mineral content.
- Coffee equipment is scaling up quickly: Water hardness is likely high. Consider filtration and regular descaling regardless of taste preference.

Water for mushroom coffee and instant blends
Instant coffee and mushroom coffee powders dissolve rather than extract the way ground coffee does, so water mineral content has less impact on flavor than with pour-over or drip brewing. Water taste still matters, though. A powder that tastes fine in filtered water can taste off in water with a strong chlorine or mineral taste.
