A moka pot uses steam pressure, not a pump, to brew coffee

A moka pot brews coffee by trapping steam in a sealed bottom chamber and forcing hot water up through a bed of grounds into a top chamber. It gets called “stovetop espresso,” but it isn’t true espresso. Real espresso machines push water through the grounds at around 9 bars of pump pressure. A moka pot works at roughly 1 to 1.5 bars of steam pressure — enough to produce a strong, concentrated cup, but not enough to build the thick crema layer a real espresso machine makes. How a moka pot works

A moka pot has three parts. The bottom chamber holds water. A funnel-shaped basket sits above it and holds the ground coffee. The top chamber collects the finished brew. As the water heats, steam pressure builds in the sealed bottom chamber and pushes the water up through a tube, through the coffee grounds, and into the top chamber. A small built-in safety valve on the side of the bottom chamber is designed to release pressure if it climbs too high.

Grind size: finer than drip, coarser than espresso

Grind size is the single biggest variable in moka pot brewing. You want a grind finer than standard drip coffee but coarser than the powder-fine grind used for true pump espresso — closer to fine table salt or fine sand.

  • Too coarse: Water rushes through too fast. The coffee tastes thin, sour, and weak.
  • Too fine (espresso-grind powder): The grounds pack too tight, pressure struggles to push through, and the coffee can taste burnt or the pot can stall and sputter.

Water level and filling the basket

Fill the bottom chamber with water up to, but not above, the built-in safety valve or fill line. Overfilling leaves no room for steam to build correctly and can force water past the seal. Fill the coffee basket level with grounds and gently level them off — don’t tamp or compress them the way you would for espresso. A tightly packed puck in a moka pot restricts the narrow steam path more than it improves extraction.

Heat control: lower and slower beats high heat

Use medium or medium-low heat, not high heat. A moka pot brewed too hot, too fast tends to taste bitter and scorched, and it pushes the water through before the grounds are properly extracted. Slower, steady heat gives a more even extraction and a calmer, more controllable brew.

Leave the lid open while brewing so you can watch and listen. Coffee should flow in a steady stream, not shoot out violently. Once the flow turns light, sputtery, or pale — sometimes called the “blonde” stage — remove the pot from the heat. Letting it run all the way to a dry sputter pulls in bitter, over-extracted compounds from the last of the water.

Safety basics for pressure-based stovetop brewing

A moka pot is a small sealed vessel that builds pressure over direct heat, the same basic principle behind stovetop pressure cookers. It’s a mature, generally low-risk design, but a few habits reduce the risk of a stuck valve or a scalding release of steam and water.

  • Never block, tape over, or remove the safety valve.
  • Don’t fill the water chamber above the valve or fill line.
  • Inspect the rubber gasket and filter plate regularly, and replace a cracked, hardened, or missing gasket before brewing again.
  • Keep the handle turned away from the front of the stove and never leave the pot brewing unattended.
  • Let the pot cool before opening or disassembling it, since the metal and any remaining pressure stay hot after brewing ends.

Total caffeine depends heavily on the bean, roast, grind, and how much you drink, so there’s no fixed number that applies to every pot.
