- Natural (dry) processing: Whole cherries are spread out and dried in the sun with the fruit still intact. Because the bean stays in contact with the sugary pulp during drying, it absorbs more sweetness, giving it a heavier body and the characteristic chocolatey, nutty, low-acid profile Brazil is known for.
- Pulped natural (semi-washed): The outer skin is removed before drying, but the sticky mucilage layer is left on the bean. This shortens drying time compared to full natural processing and tends to produce a slightly cleaner, brighter cup while keeping much of the body and sweetness.
