What makes espresso different from other brew methods
Filter coffee relies mostly on gravity. Espresso relies on pressure. A machine pushes hot water through a compact puck of finely ground coffee, and that pressure is what produces the thicker body, concentrated flavor, and reddish-brown crema on top of a well-pulled shot.

- Dose: the weight of dry ground coffee in the portafilter, usually measured in grams.
- Yield: the weight of liquid espresso in the cup, also measured in grams rather than milliliters, since crema and density make volume unreliable.
- Time: how long water contacts the puck, typically counted from the first drops to the stop of the shot.
Dose-to-yield ratio: the starting framework
The relationship between dose and yield is usually written as a ratio, such as 1:2. A 1:2 ratio from an 18-gram dose produces about 36 grams of liquid espresso. This is a starting point for tasting, not a fixed rule.

Extraction: what is actually happening in the puck
Hot water dissolves soluble compounds out of ground coffee as it passes through. Early in the shot, water pulls out lighter, more acidic compounds. Later in the shot, it pulls out heavier, more bitter compounds. Extraction time and grind size control how far along that process gets before you stop the shot.
- Under-extraction: shot runs fast, tastes sour, thin, or salty, and finishes quickly with little body.
- Over-extraction: shot runs slow, tastes bitter, dry, or hollow, and can taste burnt even with a fresh roast.
- Balanced extraction: shot lands near your target yield and time, with sweetness up front and a clean, not harsh, finish.
Channeling: the hidden variable behind inconsistent shots
Channeling occurs when water finds a path of least resistance through the puck rather than passing through it evenly. A cracked puck, uneven tamp, or unevenly distributed grounds can all cause it. The result is a shot that looks and tastes both under- and over-extracted at once — sour and bitter in the same cup, with an unusually fast pour time.
Even distribution of grounds before tamping, a level tamp, and a properly locked portafilter are the most common fixes for channeling. If your yield-to-time ratio suddenly changes with no change in grind or dose, channeling is the first thing to check.
A troubleshooting path for dialing in
- Weigh your dose. Keep it fixed while you troubleshoot.
- Pull a shot and record yield and time.
- Taste it. Sour and thin points toward under-extraction; bitter and dry points toward over-extraction.
- Adjust grind size — finer to slow the shot down, coarser to speed it up. Change one variable at a time.
- Re-taste and re-record before changing anything else.

Why does my shot run fast even though my grind hasn’t changed?

Is a longer shot always more caffeinated?
