The Four Variables That Actually Change Extraction
Every brewing method, from a basic drip machine to a manual pour-over, pulls flavor and caffeine out of ground coffee using the same underlying process. A few things determine how well that process works.
- Water temperature: Water that’s too cool under-extracts and tastes sour or flat. Water that’s too hot over-extracts and tastes bitter. - Vague precision claims (“optimal temperature,” “perfect extraction”) that don’t state an actual temperature range or method.
- Superlatives (“the best,” “unmatched”) that aren’t tied to any independent test or standard.
None of this means avoid the product — it means look for a specific, checkable claim (an actual temperature range, a named certification, a stated brew ratio) rather than a feeling-based one.
One Independently Checkable Standard: SCA Certification
The Specialty Coffee Association (SCA) runs a certification program for home brewing equipment. Machines submitted to the program are tested by a third-party lab and evaluated against the SCA’s brewing standards for temperature, contact time, and water distribution before they can carry the certification.
